Ingredients to make santa fe:

  • Poultry: chicken breasts (3 pieces)
  • Seasonings:  black pepper, salt (sea salt), garlic, oregano
  • Vegetables: bell pepper, green pepper, onion (chunks), tomatoes (2, chunks)
  • Sauce: green chili, tomato (2), baked bacon (cut into chunk), red bean,
  • Extra virgin olive oil, Mochola cheese, shredded cheese

How to make santa fe?

  • Add seasoning (powder pepper, black pepper, salt) on the chicken = Mix well.
  • Leave it there 1-2 hrs.
  • Bake bell pepper.
  • While baking bell pepper, turn on the stove; place a pan on the stove;
  • When the pan is hot, add cooking oil, then add the chicken, ones by ones.
  • Fry 30 seconds to 1 minutes for each side of the chicken.
  • While waiting the chicken ready for the oven time, remove bell pepper off the stove, place it in a bowl then using plastic wrap to cover the bowl; leave it there for 15 – 20 minutes; remove the skins; cut the pepper and remove the seed and the cord.
  • Take the chicken out and place on the tray then place the tray in the oven.
  • Bake it at 325 – 350 degree temperature for 5- 10 minutes if thinned chicken.
  • While waiting the chicken baking, starting make special sauce.
  • How? re-used the pan we just fried the chicken, add yellow onion = STIR IT + 1 teaspoon garlic + tomatoes.  When the tomato is soften, add green pepper + chicken broth + 1 tablespoon sugar + 1/2 teaspoon salt = CONTINUE COOKING.
  • Turn on the stove + pan; add bacon, stir; add beans, stir; add sugar + salt = STIR WELL = CONTINUE COOKING.
  • For sauce pan, add 3-4 slice of green pepper + 1/2 teaspoon + oregano = STIR.
  • While waiting, take bake chicken out if it’s ready.
  • Add the chicken into tomatoes sauce pan + baked bell pepper + cheese = CONTINUE COOKING.
  • Salad:  Large bowl + salad + sauce (vinegar + 2 table spoons sugar + salt + black pepper + water + sesame oil = Mix) + cranberry + dried bread
  • Dish: white rice + tomato cheese sauce + bacon bean.
  • SERVE

Bánh Trung Thu Đậu Xanh – Xuân Hồng

Ingredients to make mooncake with mung bean filling:

Ingredients to make mooncake filling:

  • 1 bag mung bean – dau xanh
  • 1/2 tsp salt – muoi
  • 1 1/2 cup granule sugar – duong cat
  • room temperature water – nuoc lanh
  • 2 tbsp cooking oil – dau an
  • 2 tbsp corn starch – bot bap
  • 1 tbsp All Purpose flour – bot mi
  • 3 tbsp rice flour (glutinous-fried) or roast glutinous rice flour – bot banh deo
  • dark caramel – nuoc mau

Ingredients to make mooncake dough:

  • 60 g cooking oil – dau an
  • 160 g Karol syrup – nuoc duong Karol
  • 1 tsp lye water – nuoc tro tau
  • 1/4 to 1/5 tsp five stars powder – ngu vi huong
  • 2 drops food color (yellow) – mau vang
  • 1 drop food color (red) – mau do
  • 220 g All Purpose flour (Gold Metal) – bot mi

Ingredients to make mooncake glaze:

  • 1 egg – trung ga
  • 1/4 tsp honey – mat ong
  • 2 tsp cooking oil – dau an
  • 1/3 tsp dark caramel – nuoc mau kho ca

Equipment to make mooncake:

  • cake mixer electronic
  • cake roller
  • 1 saucepan
  • mooncake mold
  • 1 tray
  • oven
  • medium bowl

Direction to make mooncake with mung bean filling:

  1. Rinse mung beans.  Pour into a pot.  Add 3 1/2 to 4 cups of water + 1/2 tsp salt.  Cook at the medium heat until it’s soft and cooked thoroughly.
  2. Pour cooked mung bean into a blender bowl.  Start blending.  During blending, add 1 1/2 cup granulated white sugar.  Continue blending until mung bean until mashed.
  3. Pour mung bean paste to saucepan.  Turn on the stove.
  4. Get a medium bowl.  Add 1 tbsp cooking oil.  Add 2 tbsp corn starch.  Add 1 tbsp All-Purpose flour.  Add 3 tbsp glutinous-fried rice (roast glutinous rice).  Beat gently by whipper until dissolved.
  5. Pour the mixture just done to the mung bean saucepan.  Stir thoroughly at medium heat.  While stirring, add a little dark caramel.  Continue to stir until the mixture become paste/texture.  Cooking time is around 40 to 45 minutes.
  6. Remove from the heat.  Let it’s cooled.  Divide the mung bean paste and roll into ball.  Set aside.

For the dough,

  1. Get a cake mixed bowl.  Add 60 grams cooking oil.  Add 160 grams Karol syrup.  Add 1 tsp lye water.  Add 1/4 to 1/5 tsp five star powder.  Add 2 drops of yellow food color.  Add 1 drop of red food color.  Stir well until dissolved.  Add 220 grams All-Purpose flour.  Place the bowl into the cake mixed machine.  Beat until until all dissolved and become texture.
  2. Leave it at the room temperature for 30 minutes.
  3. Turn on the oven to pre-heat at 385 F to 400 F.
  4. Spread some flour onto the board/table.  Divide the dough into amount you want.  Use a small roller, roll each piece of the dough into thinned skin circle.  Add the filling in center of dough circle.  Fold in all sides of dough to completely enclose filling.  Roll it into ball.
  5. Spray some flour into the mooncake mold.  Roll the ball through the flour.  Place inside the mooncake mold.  Press the dough to evenly.  Release the cake out.

For the glaze,

  1. Get a small bowl.  Add 1 egg yolk.  Add 1/4 tsp honey.  Add 2 tsp cooking oil.  Add 1/3 tsp dark caramel.
  2. Stir well until all mixed and dissolved.

For baking,

  1. Place all uncooked mooncake on the baking tray.
  2. Bake at 385 F for 10 minutes.  Remove the tray out of the oven and allow it cool for 10 minutes.   Brush glaze on the top of each cake.
  3. Bake again at 385 F for 10 minutes.  Remove the tray from the oven and allow it’s cooled for 10 minutes.  Brush the glaze on the top of each cake again.
  4. Bake the cake again for another 10 minutes.
  5. Transfer all cakes to the rack/place.
  6. Allow it cool.

Now the mission is done.  You have a bunch of fresh bake mooncake.
